I haven't blogged lately but still doing great! No gluten for me. YUCK :P
I had Cinnamon Chex for breakfast, Leftover Spicy Goulash for lunch (SO happy I froze half of that sauce!). and I haven't decided on cooking or grazing for supper tonight. I have a head cold so my sniffer and tasters aren't working very well. I did go grocery shopping and found some great new things! I will surprise you with them soon :)

Don't Eat The Moniter
Camera Is Back! I got new batteries and so here is my lunch. Prep time on this pizza from thought to mouth is about 30 minutes... at the MOST.
My Ingredients
Drizzle olive oil onto your Udi's Crust. Mine are always frozen, it turns out just fine. Don't forget the non stick spray on the foil so the pizza doesn't stick!
Sauce Crust. I choose to sauce all the way to the edge. Udi's crust is good, but I still don't think it can stand alone. Try not to get much on the foil or sides because it will burn fast.
I am experimenting with fresh herbs. I meant to use Oregano but for some reason had Thyme on my mind and used it instead. Glad I did. Gave my pizza a great savory flavor. Just rinse a stem or so under cool water and lay on a paper towel. Fold the paper towel and press gently. Open paper towel and run fingers from tip to base of the stem and the leaves will come off easily. If you want a stronger flavor throughout the pizza. chop the herbs. I like getting a little zap of flavor every so often so I just sprinkle the full leaves over the sauce.
Chop, grate or slice your mushrooms. These are Baby Bellas. Awesome...
Add mozzarella. Try to keep the cheese over the sauce as much as possible to keep edges from burning.

Add any toppings that go over the cheese. I like my pepperoni crispy-ish and I LOVE shakey cheese after it cooks. The pepper mix is a homeade mix that I buy at work. They are HOT until you cook them then they are just SWEET. It's strange but I love them! They aren't in my ingredients because they were a last minute thought. For supper I was tired and Ben said he wasn't hungry... So we had cereal. Nuts and Honey flavored Chex. I don't like it as much as my Cinnamon Chex but Ben ate it and I was satisfied with it.... and a string cheese... and a pudding cup. LOL Good Stuff!!!

On another note, I am bloated, sick to my stomach, my back aches, I am grumpy, I am hot and I am just plain miserable. I have been glutened!!!!!!! Not for sure where... guessing the Unwich from yesterday. Gahhhh... How in the world did I function like this. Every day! I am going to bed early tonight. I feel horrible and just want it to stop. No wonder I stopped taking care of myself for so long and I was so desolate and depressed. I can't feel like this anymore, I really can't take it.

No Time, No Time... Here's A Review!
Somehow I managed to eat GF today. It is actually getting easier! What as relief, I was worried that I would have to fight my inner demons full force all day every day with this one. I know I will have my good days and those bad days are sure to come also, but I am having many more good days than I expected to.
I went to Jimmy John's for lunch today. Too much running around on lunch break. Here is my REVIEW!
Ohhh, Jimmy John's. First your sprouts spread E-Coli. Then your Decatur staff unknowingly almost makes me sick. I went in and ordered a Veggie Club without tomatoes on french bread for my aunt who was waiting in the car. I ordered an UNWICH for myself. An unwich is a sandwich without the bread wrapped in fresh iceburg lettuce leaves instead. I decided to try it. Thank goodness I was watching them make it. They dont do like subway where they make the sandwich on its own paper. They literally just dragged my lettuce wrap down the sandwich line and right through all of the breadcrumbs!!! I calmly said I would need a different sandwich because I cannot eat wheat and even just the little mess of crumbs they put on the outside of my wrap would make me very ill. So they looked at me as though I had the plague, giggled with each other, and remade the wrap. It turned out delicious! I don't think it was contaminated, however I could never have it delivered to my house and I would definitely have to be the crazy customer that has 'special needs'. aka, pain in the butt. If I wasn't so outgoing in situations like these, I could NEVER eat anywhere besides home! Jimmy John's is okay. Just make sure you are ready to stare at the unwich making process and then probably have to deal with the hassle and somewhat embarrassment of being a pain in the butt. It is YOUR body and YOUR health. Let them make you feel silly. Who are they? Nobody worth being sick as a dog for a day or two.
I am also very proud of myself! I have a friend (who is gonna read this..lol, sorry) that I have been her 'food' friend for years. We eat when we are together. Well, she begged me to go to a restaurant with her and I stuck to my guns. I didn't even consider it. She stopped begging when she realized how serious I was and she said 'Good for you!'. I think so, too. Good for ME!
I got batteries for my camera so my pics will be back tomorrow. Too tired to cook tonight so it was an Amy's gf Veggie Lasagna. Tasty.

Good Stuff! and GF as a 'diet'?
I made GF pizza for a friend last night and guess what? She liked it. She said it tasted like Monical's. Yayyy! I didn't think she would and neither did she so I am proud to say that my GF pizza is officially as good as regular pizza. It helps that I found GF pepperoni at Aldi's. I also used baby bella mushrooms on my pizza while her's was just GF pepperoni. I wish I had pics! I have to get more batteries for my camera SOON! I have been eating the same old staples yesterday and today. I have also weighed myself and at this point I have lost 20 pounds since January 1st, 2011. However, I want to point out that the GF diet will not necessarily make you lose weight! There are a lot of GF things that are just as high in fat and calories as their GC (gluten cootied) counterparts. If you just eat the same foods you would have normally eaten but substitute GC for GF, you haven't done anything to lose weight and a gain is possible. In my case I lived a fast food addicted life. So cooking every meal at home was a BIG change. I am sure I will plateau soon because I am not watching my fat or calorie intake. Just focusing on being GF... which is enough for me right now. This month I am focusing on awareness. As in being aware of what my portions sizes look like, how much fat intake, how much soda I drink, how little exercise I get. Next month, my focus will be on whichever thing I am most aware of and ready to change.
